Manny's first birthday

It isn't everyday that our munchkin turns 1 years old and despite the fact that he probably has no idea that its even happening I wanted his first big birthday to be special. So......
I scoured pinterest for a great recipe for a special birthday treat for the baby. Here's what I found...

  • egg
  • 1/4 cup peanut butter
  • 1/4 cup cooking oil
  • 1 teaspoon vanilla extract
  • 1/3 cup honey (optional)
  • 1 cup shredded carrots
  • 1 cup whole wheat or white flour
  • 1 teaspoon baking soda

  • Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 6 cup ring mold.
  1. Combine the egg, peanut butter, oil, vanilla, and honey, if desired, in a large bowl; blend well. Stir in the carrots and mix thoroughly. Sift together the flour and baking soda and fold into the carrot mixture. Spoon cake batter into prepared pan.
  1. Bake in preheated oven for 40 minutes. Let cake cool in pan for 10 minutes; then turn out onto a wire rack to cool completely.
I followed the recipe pretty closely minus the carrots (mainly because we didn't have any in the fridge) and instead I doubled the peanut butter and honey (since he's obsessed with peanut butter).

Then for the frosting I opted for a cream cheese variety versus cottage cheese so it was as authentic as possible!

I combined 2 packages of softened cream cheese, 1 tablespoon of honey, 1 tablespoon of vanilla, and 1 tablespoon of cinnamon. Whip together well and set in the fridge for 10 minutes once done then frost the cakes. 

And Ouila!

And now its party time!!!



Needless to say, I think it was a success! He's already had two tonight!!!

For those of you who know me, writing has always been one of my passions, with the exception of my Masters or any ridiculously long testament within the wide world of Academia. I've only had the pleasure of blogging a couple of times, mostly for a few classes in graduate school, but figured it was time to organize my numerous thoughts and musings with all of you out there in cyber land. Plus, my friends have always said that I'm a great storyteller, so I'd love to share them now with you. In the meantime, I'll leave you with this... Throughout the past 33 years of my life I've seen, heard, and experienced so many different things as well as had many adventures and dream of so many possibilities. But in short, what it comes down to is this..I'm just a little Jubana trying to make a difference in the world. Everyday I live my life to the fullest and have fun doing it. Life can't always be about work or how much money you make. There's so much more to life than that.
